Christmas Welsh Lamb Nachos

These Welsh lamb nachos make the perfect Christmas day starter or festive snack

You will need:

  • 450g Lean Welsh lamb mince
  • 1 Onion, roughly chopped
  • 1 Clove garlic, chopped
  • 400g Can chopped tomatoes
  • 1 Red chilli, deseeded and finely chopped
  • 1 tsp Chilli powder
  • 1tsp Allspice
  • 400g Can red kidney beans, drained
  • 2tbsp Tomato ketchup
  • Seasoning
  • 175g Bag tortilla chips / crisps
  • 50g Stilton cheese, crumbled

For the clementine salsa

  • 2 Clementines, peeled, sliced, roughly chopped
  • 1 Lime, rind and juice removed
  • Small handfull fresh coriander, roughly chopped
  • 1 Avacado, peeled and lighly crushed

Method

Dry fry the Welsh lamb mince in a samll pan until browned with teh onion and garlic (place the mince in cold pan and increase the heat - the meat will cook in its own juices). Add the tinned tomatoes, chilli, allspice, beans, ketchup amd seasoning. Simmer on a low heat for about 15 - 20 minutes

Make the clementine salsa: Place all teh ingredients togother n a bowl, mix well together. Cover and leave for flavours to infuse

Layer tortillas and mince mixture in dish. Sprinkle with stilton and place under preheated hot grill for about 2-3 minutes until cheese has melted

Serve the nachos with a large dollop of the clementine salsa
