Beef Massaman Curry

Beef Massaman Curry

Massaman can be very difficult and time consuming to make but with the Coconut Kitchen easy massaman curry paste you are well on your way to a great tasting dish

You wil need

  • 1 jar of The Coconut Kitchen Easy Massaman Curry Paste
  • 400ml Coconut milk
  • 500g Braising Steak cut into 1 inch cubes
  • 1 ltr water
  • 20g Peanuts
  • 2 Medium waxy potatoes or sweet potatoes, peeled and cut into 4 pieces
  • 1 Onion, cut into thick wedges

Method

Cook the braising steak in a saucepan with 1 litre of water on a low heat. Gently braise the beef for about 1 -2 hours or until tender, you may need to add moe water. You will need to keep the stock that the beef produces for later

At the same time you can cook the potato in a pot of water for about 8 mins (until it's about 80% cooked) and drain

Fry the cooked beef with The Coconut Kitchen Paste in a medium saucepan over a low heat for a couple of minutes and add 100ml of the beef stock that yousaved to stop it  from burning

Add the coconut milk, bring to the boil and simmer for 5 mins and stir frequently

Add the peanuts, onion and cooked potato and simmer on a low heat for 30 mins. Stir the sauce a few times so that it does not catch on teh bottom. Check teh Massaman is not too dry or thick and add some more beef stock to loosen the sauce a bit.

Serve with a bowl of steamed jasmine rice
